Wait, WHAT??! Just where did the summer go??!
Well, for me, the summer managed to pass me by as I’ve been continuing to share my health story, along with samples of our grain-free Paleo products at our events: farmer’s markets, speaking engagements in Jacksonville, Florida and Raleigh, NC, and then picking berries for our organic treats!
On a personal note, I’ve also been fighting hard to lower my thyroid antibodies back into remission (I have Hashimoto’s thyroiditis, an autoimmune condition). Part of that plan has involved changing my diet even further than my typical gluten & grain-free, soy-free, additive-free lifestyle. I’ve now removed all nightshades (tomatoes, potatoes, etc.), legumes, eggs, nuts, seeds, and SUGARS. Yes, it’s not the easiest task, but thanks to a cooking buddy, we are helping each other stay accountable and finding tasty ways to enjoy new combinations of lots of anti-inflammatory foods.
Sugar is a tough one for everyone! And a girl who runs a bakery still needs her treats on occasion! Since it’s still summer in my book, I thought it was long past time to try my hand at frozen treats and hold onto my favorite season for a little longer.
This recipe is so easy and delicious! Just a few ingredients in the blender and BOOM, you’ve got a super tasty treat with NO SUGAR (except from the fruit). You can play around with different fruit combinations until you find one that piques your tastebuds, or rotate the flavors each time you make them to keep things interesting! (Note: berries will make your frozen treats taste sweeter, whereas other fruits such as melon, peaches, apples and pears will be milder and may be best mixed with berries for sweetness).
